It is important to wash all surfaces thoroughly to prevent cross contamination, which is letting micro-organisms from one food contaminate another. In other words, do not let meat juices mix, don't cut raw vegetables where raw or cooked meat has been, and don't use the same knife to cut raw vegetables after cutting meat without thoroughly washing it first. If you do have food poisoning, make sure you call the public health office so that other people can be protected from the same poisoning.
